What do "Extra Virgin" and "Cold Extraction" mean?
Extra Virgin (Extra Virgin Olive Oil) is the highest quality grade of all olive oils. To be allowed to bear this designation, the following criteria must be met:

Only the olive pulp is used in the production process; the pit and skin are separated. This results in a more aromatic and balanced olive oil.
From olive tree to bottle: A careful production process

The olives that grow in the mountains of Crete are harvested exclusively using traditional methods. As soon as the harvest begins, the local farmers work among the olive trees at dawn.
The olives are harvested mostly by hand or carefully with special vibrating rakes to avoid damaging the fruit. This harvesting method prevents scratches on the surface of the olives and preserves their natural quality. The harvested olives are taken to the oil mill on the same day to prevent any oxidation and ensure the highest possible oil quality.
At the olive mill, the olives are first washed and completely freed of leaves, dust, and other impurities. Then, the olives, including the pits, are ground into a paste. This step begins the so-called "malaxation," a gentle kneading process in which the olive paste is stirred for about 45 minutes. During this process, the small oil droplets combine to form larger ones.
The crucial factor is the temperature: it never exceeds 27°C during the entire processing. This is essential for cold extraction and ensures that vitamins, minerals, polyphenols, and the natural aroma of the olive oil are preserved. The entire process is carried out exclusively using mechanical methods – without any chemical treatment.
After processing, the olive oil is not bottled immediately. It first rests in temperature-controlled stainless steel tanks that prevent contact with oxygen or light. This ensures that the aroma, flavor, nutrients, and vitamins are fully preserved. During this resting period, the olive oil is not filtered, resulting in an even more natural and pure product.
In the final step, the olive oil is analyzed in the laboratory. The free acidity, as well as the taste and aroma characteristics, are tested. Only when all quality criteria are met does the oil receive the "Extra Virgin" certification.
It is then carefully bottled, labeled, and stored in a cool, dark place until it reaches the customer. Each bottle embodies the purity of this process, bringing the natural bounty of Crete directly to the table.
